1 cup sliced mushrooms
1 cup thinly sliced carrots
1 red bell pepper sliced
1 tablespoon grated fresh ginger
6 garlic cloves, minced
1 cup sliced cabbage
¼ cup pure maple syrup
1 pinch of Sichuan pepper (optional)
3 tablespoons brown rice vinegar
2 tablespoons of soy sauce
1 tablespoon lemon juice
3 tablespoons chopped fresh cilantro

Sichuan pepper is the secret ingredient of this recipe, although you can put it optionally, it is the spice that will give a change to Chinese food-style soup. Preparation
- Preheat a pot over high heat and add the mushrooms, carrots, bell pepper, ginger, and garlic with a little water, let it cook for about 7 minutes, and stir.
- Add the cabbage and a pinch of pepper, and let cook for two minutes.
- Put 7 cups of water in it and bring everything to a boil.
- In a bowl, mix another pinch of pepper with vinegar, soy sauce, and lemon juice.
- Add the previous mixture to the soup and bring it to a boil.
- Sprinkle the cilantro and it is ready to be served.
