  • ⅓ cup lemon juice
  • ¼ cup olive oil
  • 1 tablespoon of salt

  • Open the avocados and with the help of a spoon remove the pulp, and place it in a bowl.
  • Mash the pulp with the help of a fork, and mix it with the salt, lemon juice, and olive oil.
  • Add the rest of the ingredients and incorporate them evenly.

GUACAMOLE WITH AMARANTH

Ingredients:

  • 4 pieces of ripe avocado
  • 2 small garlic cloves
  • 1 cup of amaranth
  • 2 pieces of serrano chile
  • 300 grams of tomato
  • 1 tablespoon of salt
  • 2 tablespoons lemon juice
  • 2 tablespoons of olive oil

Procedure:

  • Place the amaranth in a frying pan or griddle, lightly toast over very low heat, and set aside.
  • In the same skillet or comal place the tomatillos, chiles, and garlic cloves. Leave until complete tater.
  • In a molcajete, begin to crush the garlic cloves, followed by the amaranth and salt.
  • Add the chiles and form a paste, gradually add the tomatillos and continue mashing.
  • Remove the avocado pulp with the help of a spoon and integrate it into the preparation.
  • Season with lemon juice and oil, mix, and serve.

GUACAMOLE WITHOUT AVOCADO

Ingredients:

  • 300 grams of tomato
  • 1 clove garlic
  • 150 grams of zucchini
  • 2 serrano chiles
  • ½ cup white onion (finely chopped)
  • ½ cup fresh cilantro (finely chopped)
  • ⅓ cup olive oil
  • ¼ cup lemon juice
  • 1 tablespoon of salt
  • ⅓ cup tomato

Procedure:

  • Place the garlic and tomatillo in a skillet.
  • Grill over low heat until semi-cooked.
  • Place in the blender glass: salt, olive oil, lemon juice, zucchini, tomatillo, and garlic. Blend everything perfectly and place it in a bowl.
  • Add the chopped serrano chile, cilantro, onion, and tomato to the previous grind.

Ingredients:

  • 1 piece of guajillo chile (without veins or seeds)
  • 1 clove garlic

Procedure:

  • Heat a frying pan, add the oil and lightly fry the garlic, ancho chile and guajillo chile.
  • Blend the chiles, garlic, olive oil, lemon juice and salt.
  • Open the avocados and with the help of a spoon remove the pulp, place it in a bowl.
  • Crush the pulp with the help of a fork, mix it with the previous grinding.
  • Add the cilantro, onion and serrano chiles and incorporate evenly.
  • Serve and accompany with tortilla chips, toast, chicharrón or the product of your choice.

 

BLACK GUACAMOLE

Ingredients:

  • 4 pieces of ripe avocado
  • ½ cup red onion (finely chopped)
  • ½ cup cilantro (finely chopped)
  • ¼ cup serrano chile (finely chopped)
  • 1 piece of tortilla
  • 2 pieces of mulato chile (without veins or seeds)
  • ⅓ cup lemon juice
  • 1 tablespoon of salt

Procedure:

  • Burn the mulato chile and the tortilla over direct heat. As soon as the ingredients have caught fire, place them in a bowl and let them turn to ashes.
  • Mix the ashes with the lemon juice and salt, and mix until dissolved.
  • Add the avocado to the previous mixture and mash with the help of a fork.
  • Add the red onion and cilantro, stir, and serve.
